C.A.O.S Cheese-makers


We are based on Yester Mains Farm in Gifford, East Lothian. Working alongside the McCreery family on their family-run dairy, Yester Farm Dairies. We have created our own Caseificio (creamery) with the privilege of having such fresh milk only a few yards away! We make a range of pasta filata (spun paste) cheeses: Fiordilatte, Scamorza, Provolone and many others all made using traditional methods, hand-crafting techniques and our own starter culture. We do not use additives and we let the curd mature naturally to deliver to our customer this unique combination of local and continental at its best in flavour and nutritive properties. Thanks to the ancient Scottish tradition some of our cheeses are also available smoked.


The family-run farm has a herd of Friesian cows which thoroughly enjoy the rich, lush green pastures bordering with the Lammermuir Hills known as "the Garden of Scotland". These attributes are essential for us to produce a quality mozzarella, packed full of all the goodness of fresh milk.
